Eat Here Now: The Piggery

Is it possible to write TOO much about sandwiches? Maybe some sandwiches get overexposed–PB&J perhaps? But you could write forever about the sandwiches being served at The Piggery Butcher & Deli in Ithaca and never run out of mouthwatering adjectives.

Take the Deli Sandwich (pictured above). You need a jaw that unhinges to eat this thing; layers of farm-cured ham and deli meat with thick slices of Red Meck cheese from Finger Lakes Farmstead between crisp and chewy ciabatta bread from Tribeca Ovens measure up to at least eight inches of goodness. Dainty touches of housemade vinaigrette and spicy micro greens from West Haven Farm balance out the heft. Somewhat. This is a meal of a sandwich and as much as I think of myself as a big eater, I can only finish off half in one sitting. The other half makes an appearance at the breakfast table with a fried egg and coffee.

And that’s just the beginning. Tacos and burritos are the south of the border equivalent of sandwiches and The Piggery folks have those for you too. Even hot dogs are on the list, though called Pig Dogs out of respect for the beast they come from. And the pulled pork sandwich is a must-eat if there ever was one, though I somehow manage to end up wearing some of it every time. It’s that juicy.

Owned and operated by husband and wife team Brad Marshall and Heather Sandford, The Piggery is a very, very welcome addition to the farm to table dining scene in Ithaca. Brad and Heather’s pig farm just outside of Trumansburg is a model for sustainable, humane animal husbandry. Expanding beyond the breakfast and lunch options, The Piggery recently added a dinner menu for Thursdays and Fridays and we’re all over this thing. Here’s the menu so you can get as excited as we are. Those pork wings were the perfect salty hit after a wine tasting event at the next door Red Feet Wine Market.

Local Beer Pairings: Ithaca Pale Ale, Ithaca Casazilla and Ithaca Apricot Wheat

Featured Dessert: Maple Pork Rinds – $4.95 House made from our farm’s pastured pork. Sweetened with NYS Maple Syrup. Soooo addictive!!

Soup: Pozole – $2.95 cup, $3.95 bowl A rich, spicy, Mexican style pork stew featuring our pastured pork and local hominy corn

Appetizers:

Pork wings (World Famous!!!) – $7.25 Crispy fried pork cutlets served w/ our local blue cheese creme fraiche. Hot sauce or a soy ginger & scallion sauce

Sopes – $5.95 Crispy masa boats heaped with shredded pork, roasted poblano sauce, cabbage, radishes and creme fraiche

Taco – $3.75 (choose Piggery pastured pork or local, pastured beef)

Entrees:

All are served with a crisp lime Kohlrabi salad & choice of rice and beans, hammy mac n cheese or potatoes rajas

Crunchy Pork Loin Adobo – $14.95 Slices of roasted pork with crunchy skin served on corn tortillas with maple adobo, cabbage dressing and creme fraiche
Porchetta Platter- $14.95 Prime Piggery Pork Loin sensously rubbed with fennel, rosemary and garlic. Crispy mahogany crust & juicy meat!
Pastrami Platter – $14.95 Housemade with local, pastured beef. Served with local bread, stone ground mustard and pickled onions.
Taco platter – $10.95 Three tacos plus sides featuring a pork taco, chicken taco and beef taco. All local & pastured meats.
Pulled Pork Platter – $12.95 Pulled pork topped with our housemade slaw and served w/ local bread
