Littletree Orchards Apple Cider

It’s spring salad season! I’m always trying to find a new combination of veggies or a new dressing to keep things interesting. So when I was found myself in possession of this apple cider vinegar from Littletree Orchards, I couldn’t help but begin to dream of a vinaigrette recipe. Littletree Orchards specializes in primarily apples but also peaches, sweet cherries, tart cherries, asian pears, tomatoes, Brussels sprouts, pumpkins, winter squash, basil, dried flowers and gourds. They’re committed to the “Littletree Experience.” This means not only keeping a sustainable orchard where the public can have an incredible time apple-picking, but also committing to diverse agriculture that keeps the land fertile. While the orchard itself is closed until August (for apple picking season!), you can still pick up any of their goodies at the Ithaca Farmers’ Market — which is back at Steamboat Landing on Saturdays (Sunday begin May 5th). So until that glorious apple season, head by the market to pick up any of their delicious apple products—including apple butter, apple doughnuts and apple cider slushies.

Apple and Honey Mustard Vinaigrette

1 tablespoon dijon mustard

2 tablespoons honey

1/2 cup apple cider vinegar

salt

pepper

1/4 cups olive oil

Add everything except olive oil into a bowl and stir. Slowly whisk in the olive oil. If you want it sweeter, add more honey. More tart, add more vinegar. Experiment! — Carly Browning
