Rose Marie Belforti has been the owner-operator and cheesemaker at Finger Lakes Dexter Creamery in King Ferry since 2006.

Edible Finger Lakes: What is the most interesting thing you always keep in your fridge?

Rose Marie Belforti: My Kefir Culture brew!

EFL: What’s the last meal you cooked for yourself?

RB: My own garden-grown fresh zucchini, with our Finger Lakes Dexter Creamery grass fed raised beef sautéed with fresh garlic, onions and tomatoes from our farm, along with local organic summer corn on the cob buttered with our homemade butter and sprinkled with sea salt. Yum!

EFL: What’s the one kitchen tool you couldn’t live without?

RB: My knife.

EFL: What was the first Finger Lakes wine/beer/spirit you ever tasted?

RB: Too long ago to remember. They are all good enough for my table!

EFL: If you could add one item to the Finger Lakes foodshed that isn’t already there, what would it be?

RB: Organic LOCALLY grown olive oil.

EFL: What does it mean to you to be a part of the Finger Lakes foodshed?

RB: It’s a great privilege!!!
