Mom’s Country Spare Ribs

A delicious and hearty ribs recipe that features BBQ chili sauce.

PREPARE RIBS

Salt and pepper ribs.

Parboil ribs on the stove or boil for 20 minutes.

Once the ribs are done boiling, brush on the BBQ Chili Sauce.

Put in oven for 2-4 hours.

When done, brush more sauce on.

CHILI SAUCE

18 tomatoes
2 medium onions
2 green peppers
1 and 1/2 cups sugar
2 cups vinegar
2 tsp salt 1 tsp ground cinnamon
1/2 tsp cloves
1 tsp allspice
1/2 bunch or more of celery

Peel, core and chop 18 tomatoes.

Chop 2 medium onions and 2 green peppers fine.

Combine all other ingredients.

Boil, slowly for 4 hours or until desired thickness.

BBQ CHILI SAUCE

4 tbsp brown sugar
2 tbsp paprika
2 tsp salt
2 tsp mustard
1/2 tsp chili powder
1/3 tsp cayenne pepper
4 tbsp worcestershire sauce
1/2 cup vinegar
2 cups tomato juice
1/2 cup ketchup
1 cup water
2 cups chili sauce

Mix in sauce pan. Simmer 15 minutes until slightly thickened.
