Farro Salad with Apples and Walnuts

This hearty and healthy salad that features fresh spinach, a chopped apple, goat cheese, and walnuts may become your new lunchtime go-to meal!

(Serves 2–4)

INGREDIENTS

2 cups cauliflower, chopped
½ cup farro, uncooked
2 cups packed fresh spinach, chopped
1 apple, chopped in bite-size pieces
1 avocado, peeled and cut into small pieces
½ cup walnuts, chopped
Goat cheese, crumbled

PREPARATION

Toss cauliflower on a sheet pan with olive oil and sea salt and cook in a 400°F oven for about 25 minutes, until crispy and golden on the edges.

Combine farro in a pot with 1 cup of water. Bring to a low boil and cook until done, about 20 minutes. The grains should be tender but not mushy. Drain any excess water.

Combine all ingredients, except goat cheese, in a large serving bowl and toss with honey-mustard dressing. Sprinkle goat cheese on top and serve.
