Today’s FLX Foodie Photo by Carole Topalian shows a CaryMo Chocolate candy bar. Cary M. Becraft makes these high-quality chocolate bars right here in the Finger Lakes. She initially moved to New York from Virginia in 1997. Becraft discovered her passion for chocolate-making by spending around 15 years working in the pastry department of Brookyln’s River Cafe, according to CaryMo’s website.
In 2000, Cary began selling handcrafted chocolate candy boxes. About seven years later, she moved with her husband Peter to the Finger Lakes where Peter became an Assistant Winemaker at Anthony Road Wine Co. on Seneca Lake. Cary then began making her custom chocolates in a production kitchen at Anthony Road. She still makes her handcrafted candies there today and Peter is now the head winemaker.
Cary crates her find chocolates using wine reduction fillings and other components in local wines. This allows her chocolates to become a compelling companion to many specific wines.
