Stovetop “Plank” Potatoes

  • 2 tablespoons butter
  • 2 tablespoons rendered pork fat* optional if you have braised pork recently
  • 4 ounces dry white wine
  • 2" long skinny” russet potatoes, skin on, trim 1/8” from two sides then split in half lengthwise to create a plank shape
  • Fresh sage sprigs
  • Fresh thyme sprigs
  • Leaf parsley sprigs
  • Kosher salt
  • Fresh black pepper


  • In a small skillet, that has a lid, on medium heat, add the butter, pork fat if you have it, or simply add more butter, and the wine.
  • Add the potatoes and cover with herbs. Season with salt and pepper. Cook for 5-6 minutes with the lid on. Turn each potato, season with salt and pepper and cook another 5-6 minutes or until soft when tested with a small paring knife.
