Kindred Fare Kale Salad

Executive Chef Max Spittler at Kindred Fare shared this kale salad recipe. Kindred Fare is a Geneva restaurant with a seasonal menu inspired by gatherings with family and friends. This salad features nutritious curly kale with a slightly bitter and peppery taste that can be sourced from farms such as Six Circle Farms in Lodi. To utilize another local food producer, the feta can be sourced from Lively Run Goat Dairy.

Ingredients
  

  • 6 cups classic curly kale
  • 1/2 cup buttermilk herb dressing
  • 4 ounces crumbled feta cheese
  • 1/4 pound hot crispy slab bacon
  • 1/2 cup pickled red onions
  • 1 + cup croutons

Buttermilk Herb Dressing

  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1/4 cup buttermilk
  • 2 tablespoons chopped fresh dill
  • 1 teaspoon finely chopped garlic
  • to taste salt and pepper

Pickled Red Onions

  • 2 red onions thinly sliced
  • 1 cup apple cider vinegar
  • 2 tablespoons sugar
  • 2 tablespoons salt

Croutons

  • 2 cups large cubed bread
  • olive oil
  • to taste salt and pepper

Instructions
 

  • Start by hand tearing the kale in bite size pieces into a large bowl.
  • Toss and massage the kale with 1/2 cup of buttermilk herb dressing or to your liking if you would like a light dressing.
  • After you have mixed the kale with the dressing, add in the feta cheese, pickled red onions, hot bacon, and croutons.
  • Add a little more dressing and toss.

Buttermilk Herb Dressing

  • We make our own mayo in house, but your favorite brand will work well too. mix all ingredients in a bowl until smooth and creamy.

Pickled Red Onions

  • Bring to a boil the apple cider vinegar, sugar and salt in a saucepan.
  • Pour over sliced red onions in a sealable container.
  • Cool and store in the fridge for 24 hours before serving.

Croutons

  • Cube your favorite bread. we typically use brioche, foccacia or other house made breads.
  • Coat bread in olive oil and sprinkle with salt and pepper.
  • Bake on a sheet pan in a 300 degree oven for approximately 15 minutes or until toasted.

Hot Crispy Bacon

  • Cut your bacon in 1/4-1/2 squares.
  • Oven roast for 20 minutes or until crispy at 325 degrees. 
  • If you cannot readily find slab bacon in your local grocery, any cured & smoked thick cut bacon will do.
